Event Overview

Join a professional meatcutter and a thrifty shopper as we show you how to get the most out of a whole chicken. At some grocery stores, a whole organic chicken is around $3.99 per pound, but boneless skinless chicken breasts can run $7.99 per pound! In this class, meatcutter Ariel will teach you how to break down a chicken in a number of surprisingly easy and delicious ways, including:

- deboning your own chicken breasts and thighs
- breaking a whole chicken down into six, eight, and ten pieces
- “spatchcock” or butterfly a whole chicken -- great for the grill!

Then, pioneerwoman Breanne will teach you to make chicken stock, freeze and thaw meat correctly and safely, and render chicken fat (schmaltz).

Finally, Ariel and Breanne will teach you two recipes to use two underappreciated and inexpensive chicken cuts: wings and drumsticks.

Dinner included, BYOB.

This class is co-taught by Breanne Heath, a thrifty shopper and Ariel Diamond, who cuts meat all day. She is quite pleased with this. She likes to talk to people about meat and where it comes from, and she makes sure they feel comfortable cooking it. Ariel has an unused degree in Environmental Studies from Wellesley College, scars on her arms from Green Zebra and Girl & the Goat, and a rabbit named Pat the Bunny.

    My husband was unexpectedly home for the weekend and he decided to take the class with me - this man does not cook! Fortunately the hands-on experience of cutting our chicken - held his interest and mine too! We will be buying whole chickens and using our new-found skill! The bonus of this class was the chicken that Breanne and Ariel prepared - so yummy - recipes and methods that we will use over and over.
    The other bonus of the class was the camaraderie that was shared with other class participants and the instructors. What a fun experience!

    This was such an awesome class! No longer will I buy chicken breasts at the grocery store. Whole chickens or bust. Breanne has an amazing kitchen to learn in, and the meal afterwards was fantastic.
