Event Overview

Ever wanted to learn how to butcher from the man who, according to Forbes, is responsible for the "best salami in America"? Join us for a whole hog butchery demonstration. First learn, the importance of heritage breed hogs and responsible farming methods with Bobbi Sandwisch of Blind Star Farm. Then Mark Sanfilippo, our head Salumiere and porcine master, will demystify whole hog butchery and offer suggestions on how you might use each cut. This class also serves as a farmer fundraiser for Bobbi Sandwisch and Alex Weber as they continue to rebuild livestock, equipment, and infrastructure after the sudden closure of the farm they tended last March. A portion of the proceeds from class as well as all in-store purchases the evening of the event will be donated to continue their growth.
