COME, CUT, CAVORT, CONSUME AND CARRY HOME MEAT!

Announcing our most popular Butcher Class - Our “Heritage Whole Hog Breakdown”. We welcome everyone with a wide range of culinary and carnivorous backgrounds who have passion or simply a curiosity for the art of butchery. In this class, Dabblers will have the opportunity to breakdown a Heritage Berkshire Hog carcass from Slagel Family Farms - raised naturally without antibiotics.

Our famous RMM Cut, Taste & Take Home Butcher class offers foodies, grillers, home chefs and meat lovers the opportunity to learn the art of “Whole Hog Butchery” from some of the best Master Butchers in Chicago. This is not just a demo but a real hands-on meat cutting experience under the supervision and tutelage of our great Master Butchers! We’ll guide you through the process from the moment the hog carcass is delivered to when it reaches your taste buds!! Learn knife skills, butchering techniques and how to breakdown a hog carcass into tasty pork cutlets, tenderloins, roasts and ground! You’ll then take each part and break it into standard and some special cuts traditionally not found at your local grocer! You’ll feel the meat between your fingers, experience the smooth cut of the knife, smell the fresh aromas and be part of the renaissance of the local butcher.

What to Bring

Wear casual clothes and comfortable shoes and bring your appetite! We provide everything else!

Prerequisites

Must be at least 18 years of age or accompanied by a Parent.

We are also proud to offer our butcher class at a special culinary space offered to us by The City Winery. Nestled in the infamous Chicago Meat District in Fulton Market, City Winery is a unique facility, combining a fully functioning winery with intimate concerts, food, butchery & wine classes with a full bar and restaurant.

What's Provided

We'll provide the gloves, apron and knives for you to use during class. You'll receive a FREE RMM Baseball and TAKE MEAT HOME!

    This was an amazing experience! The instructors were clearly, very passionate about what they do and I felt that they truly wanted to be at class and share their knowledge with others. I also appreciated the hands on aspect of this class. I don't know if i'll ever get to butcher a pig again but if I have to I know I can! Would definitely recommend.

    This was an excellent class. Everyone involved was so happy to be teaching. The classroom space was perfect for the group. Everything was prepared. The teaching was excellent and the food was perfect! And we got to take home some freshly butchered bison!

    The only complaint is that the butchers were showing how to butcher the top and the bottom of the bison at the same time, so it was impossible to see everything. I guess I'll have to go again to learn the rest!
