When we think about getting away, we dream of evening bicycle rides through the markets of Bombay, long, bejeweled saris and aromatic Indian cuisine by the plateful. We don't however, envision all the extra calories we'd be consuming as a result of those feasts fit for an Indian prince. Or the price of a round-trip ticket to Mumbai. (Boo.)
Thankfully we have this Dabble class, which allows us to explore, learn and taste a range of the tantalizing flavors found in Indian cuisine. Spices, legumes, rice and lean meats (shrimp, fish, chicken and turkey) are the stars of this class, and we'll learn:
-How to cook vegetables in a way more appealing manner than your run-of-the-mill boil / steam
-The healing properties of Indian spices
-Where to buy / storing tips for keeping spices fresh and
-How to cook ahead and freeze for later serving.
Walk away with a few healthful Indian recipes under your belt, information on all the spices discussed in class and an array of tips on how to take that vacation to India you've been dreaming of ... without ever leaving the comfort of your kitchen.

Alamelu Vairavan was a practicing health care professional for over 15 years before she decided to follow her passion for cooking to educate the public on healthful Indian flavors. Since pursuing her cooking passion full-time, she's authored a cookbook, appeared on national and regional TV shows, developed her own local PBS cooking show titled, "Healthful Indian Flavors with Alamelu," and taught at sold out cooking events at the James Beard Foundation, a prestigious cooking institution in New York. She also conducts regular cooking events in Bloomingdale's department store across the Midwest. Finally, Alamelu has particpated in Annual Food and Wine Experience shows in Wisconsin. She looks forward to sharing her healthy insights with hungry Dabblers!
