I was raised on a working farm and have collected tens of thousands of eggs over the years. My family was HUGE (13 kids!) so there was never time to customize your order—just scrambled eggs or a casserole. It's no wonder when I finally flew the coop (see what I did there?) and discovered that you could order what you ACTUALLY wanted for meals that I fell in love with the omelette (or 'omelet' or 'eggy-thing filled with goodness' depending on what region you're from).
I learned the art of breakfast-making hard and fast as a late-night short-order cook at Jake's Diner in Northampton, Massachusetts, almost 20 years ago, where I'd have dozens of tickets staring me down from tipsy New England college students who always had eyes bigger than their stomachs. Messing up an omelette order by burning it or breaking it on the griddle would throw a serious wrench in the night. So after cracking 288 eggs to start the night and blending them up with a power drill and drywall mixer, I made sure not to waste a single one.
It all starts with a good pan but this can be overcome with some tips and tricks that I'll share with you. I'm no James Beard Award-winning chef, just a regular guy who happens to run Dabble and makes really, really great omelettes. Let's get cracking!
